This time we didn’t want too big an influence of the PX with its raisiny sweetness, so we let the whisky spend just a very brief period in the fresh sherry casks. This choice was successful, adding a deep complexity and a constantly evolving flavour, but just a hint of fruitiness: the first attack is on plums, apricots and ripe peaches, then it becomes intensely mineral and waxy with a fast but smooth transition. The oak tannins and the appetizing pepper of a finely aged whisky grow louder and louder without ever becoming impolite, for a lively and lingering finish. A malt which is evidently old and refined (the nose showcases a particularly fine oak influence), with just a slight twist of sweetness.
