The delicate character of single grain whiskies requires long patient maturation in refill casks to bring out all the finesse and complexity: too much oak would simply overpower them. This is why we chose third fill sherry wood for its final six years of finishing: to add just a touch of tannins and fruitiness while retaining the ethereal character of the spirit. Very aromatic, with a delicate nose full of subtleties: peaches, dried fruits, nuts, a hint of old bookstore, a slightly herbal quality. At the palate it’s light bodied, starting on a creamy and sweet note of cereals, but then building to a crisp character, with a pleasant peppery spiciness. Again, it’s quite herbal: rosemary, thyme and mint. No winey character from the sherry is evident. The finale is dry, clean but very lingering.
