A very old and smooth Speyside malt, of the kind that always benefits from unhurried maturation in refill bourbon casks to let the spirit grow and shine, to quietly build a multi-layered and complex profile. The richness and subtlety are immediately evident at the first whiff: a kaleidoscope of honey, propolis, with a subdued fruitiness and a spicy hint of old furniture polished with beeswax. Taste it with a relaxed sip, and take time to explore its subtleties: initially very fruity (bananas, apples), very waxy and mineral, it strikes the perfect balance between sweetness and dry character. It slowly but steadily grows toward pepper, mustard, candied citrus, while tannins remain surprisingly restrained. It then finishes on a long, lingering note of butter pastries, honey, flowery notes (chamomile), as delicate and clean as it is persistent.
