Following the limited 30yo from a few months ago, we are proud to present another elegant cask. Long and patient aging in refill oak brought smoothness and maturity, the exact opposite of our brash and loud 18yo in first fill sherry: its wise and ancient father, tamed by the years. It still is vibrant, powerful and fresh, but the intense peat is made velvety by the lovely malty sweetness and by the notes of vanilla and toffee from the oak (always gentle and never tannic in its influence). Elegant, medicinal, with just a touch of pepper, herbs and wax, it goes on and on at nose and palate, for a robust but classy experience that takes a little bit of water very well to suit your taste.
