A finish for 30 months in first fill Pedro Ximenez might seem quite long, but the key to subtlety here was in the use of a butt: a large type of cask that imparts a slower and more gradual influence from the wine. As a consequence, the result is mature, fruity and rich, but still very balanced. At the nose it has delicate notes of butter pastries and raisins, with a touch of caramel, peaches and apricots. It’s not markedly winey or heavy, though. At the palate it has all the soft goodness of the PX, but without sugary excesses. Raisins, dried plums, but also a pleasant touch of acidity: it’s fruity, appetizing, but not cloying. It remains on a light playful style, before the pepperiness and spicy blast of the tannins kick in. Only in the aftertaste you can feel the sweetness increasing, with a honeyed and slightly toasted touch.
