A slightly easier and lighter approach to this Speyside malt: still very fruity and winey thanks to the finish for 16 months in a first fill Pedro Ximenez barrel, but with a slightly leaner and breezy touch. The mineral, flowery, dry and very firm style of the spirit is preserved in spite of the sweetness of the wine, striking a great balance between agility and richness. A bit shy at the nose at first, it definitely opens up with a few drops of water, revealing a pleasing interplay of sweet and sour: first orange rind and peaches, then a drier and spicier note of balsamic vinegar. Winey, but not exceedingly so. The tasting experience changes with water: straight, it’s quite tight and a bit tannic, then with a few drops it becomes sweeter, and with a little bit more water it becomes easy but drier and suited (for example) for an aperitif. Citrusy, very mineral, with just the right amount or raisins to make it smoother.
