Fruity but still unexpectedly rather dry, after two years of finish in a first fill Pedro Ximenez hogshead. It’s a juicy and rich malt, but the spicy and tannic backbone is strong and perfectly balances the sweetness from the wine. At the nose it’s quite intense: winey, with a buttery and honeyed touch, and also very raisiny. The sourness of oranges and peaches makes it lively and vibrant, complementing the honey. The same contrast between fruity sweetness and sourness is present at the palate: first aperitif bitters, orange peel and herbal notes, then the expected raisins, dried plums and chocolate. The intensity of the tannins and a whiff of pepper and cinnamon keep growing towards the long and lingering finale.
