Very old fashioned in style, thanks to a finish for 30 months in a historical butt that had been previously used to mature Oloroso sherry for more than 60 years! As a consequence, it’s very dry, oxidative, astringent: the nose is particularly winey, with that typical “old bookstore” note. It’s only slightly fruity, mostly on desiccated apricots and peaches, and then hints of vinegar, yeast, toasted bread. Add a drop of water to make it more approachable if you wish: at the palate it’s just as nutty and dry, with lots or died fruits (mostly apricots and raisins) and orange juice, but never particularly sweet. It’s a very salty whisky, too. The finale is extremely dry, nutty and appetizing. A perfect match with seasoned cheese!
